About our Beans & Roasting Process

Our Espresso

Some people ask why the espresso is not our darkest roast, and some assume it's a different bean altogether, but that's not the case. There are two types of coffee beans in the world -- Robusta and Arabica. Robusta is a lower quality tasting bean, but it contains more caffeine, which is naturally bitter tasting. Arabica is a much better tasting bean, and that is all we use. The Southern Italians used Robusta, and they had to burn them almost to charcoal to get all the pungent taste out. We use the Northern Italian style of espresso roast because they use Arabica beans.

Our Decaffeinated Coffee

The decaf is done by the "Swiss Water Process" (SWP) or the "Mountain Water Process" (MWP), which utilizes only carbon-filtered water. There are no harsh chemicals involved.
